The Mexican Don Pepe is grown in the southern state of Chiapas. It is known for its light to medium body, light but balanced acidity, rich, sweet flavor with hints of honey and malt along with a pleasant dry finish like a fine wine.
We roast the Don Pepe to just slightly past medium to accentuate the body of the coffee but without overwhelming its delicate acidity and rich flavor.
Also, like our Costa-Rican, the Don Pepe is an excellent and versatile “daily cup.” We particularly like it brewed using a French press or pour-over.
